- Heat oil in a kadai. Add cumin seeds and let them crackle.
- Add green chilli and sauté for a few seconds.
- Add chopped lauki and mix well.
- Add turmeric, coriander powder, red chilli powder, and salt.
- Mix everything, cover, and cook on medium flame for 10–12 minutes until lauki becomes soft.
- Open the lid, give it a quick stir, and cook for another 1–2 minutes to reduce any extra moisture.
- Garnish with fresh coriander and serve hot with roti or dal-rice.
Notes
For extra flavour, add a pinch of garam masala at the end. Choose tender lauki for best results.
