  • 2 cups Lauki (bottle gourd), peeled and chopped cut into small cubes
  • 1 tbsp Oil
  • 1/2 tsp Cumin seeds
  • 1 Green chilli, slit
  • 1/4 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1/2 tsp Red chilli powder adjust to taste
  • 1/2 tsp Salt adjust to taste
  • 2 tbsp Fresh coriander, chopped for garnish

Method
 

  1. Heat oil in a kadai. Add cumin seeds and let them crackle.
  2. Add green chilli and sauté for a few seconds.
  3. Add chopped lauki and mix well.
  4. Add turmeric, coriander powder, red chilli powder, and salt.
  5. Mix everything, cover, and cook on medium flame for 10–12 minutes until lauki becomes soft.
  6. Open the lid, give it a quick stir, and cook for another 1–2 minutes to reduce any extra moisture.
  7. Garnish with fresh coriander and serve hot with roti or dal-rice.

Notes

For extra flavour, add a pinch of garam masala at the end. Choose tender lauki for best results.
