  • 1 cup coconut milk (light or regular) unsweetened preferred
  • 3 tbsp chia seeds
  • 1 cup ripe mango pulp fresh Alphonso or any sweet variety
  • 1 tbsp honey or jaggery syrup optional for sweetness
  • 2 tbsp fresh mango cubes for topping
  • 1 tbsp grated coconut optional topping

Method
 

  1. Add coconut milk to a mixing bowl.
  2. Whisk in chia seeds and sweetener until well combined.
  3. Let the mixture rest for 10 minutes, then stir again to avoid lumps.
  4. Cover the bowl and refrigerate for at least 4 hours or overnight for best texture.
  5. Once set, layer the chia pudding with mango pulp in serving bowls.
  6. Top with mango cubes and grated coconut. Serve chilled.

Notes

Use fresh, sweet mangoes for the best flavor. For a thicker pudding, add 1 extra tbsp chia seeds.
