  • 1 cup Bajra flour (pearl millet flour)
  • 1/2 cup Whole wheat flour helps with binding
  • 1 cup Fresh methi leaves finely chopped
  • 1 tsp Ginger paste
  • 1/2 tsp Turmeric powder
  • 1 tsp Red chilli powder adjust to taste
  • 1 tsp Ajwain (carom seeds)
  • 1 tsp Salt or as needed
  • 1 tbsp Oil for dough
  • as needed Water to knead dough
  • 1-2 tsp Oil or ghee for roasting

Method
 

  1. Add bajra flour, whole wheat flour, methi leaves, ginger paste, turmeric, red chilli powder, ajwain, salt and oil to a mixing bowl.
  2. Mix everything well using your hands.
  3. Add little water at a time and knead a soft, smooth dough.
  4. Let the dough rest for 10 minutes.
  5. Divide the dough into equal balls.
  6. Dust with flour and roll each ball into a medium-thick paratha.
  7. Heat a tawa and cook the paratha on both sides. Apply a little oil or ghee and press gently until golden spots appear.
  8. Serve hot with curd, chutney or pickle.

Notes

You can add finely chopped onions or green chilli for extra flavour. Always serve these parathas hot for best taste.
