  • 200 grams Boneless chicken, small pieces prefer breast
  • 1 cup Sweet corn kernels fresh or frozen
  • 1/2 cup Carrot, finely chopped
  • 1 cup Tomatoes, chopped
  • 1/4 cup Onion, chopped
  • 1 tsp Garlic, minced
  • 3 cups Water or chicken stock
  • 1 tsp Cumin powder
  • 1/2 tsp Red chilli powder adjust to taste
  • 1/2 tsp Black pepper
  • 1 tsp Salt as per taste
  • 1 tbsp Lemon juice
  • 2 tbsp Coriander leaves, chopped

  • Knife

Method
 

  1. Heat 1 tsp oil in a pot. Add garlic and onions and sauté for a minute.
  2. Add tomatoes and cook till they soften.
  3. Add chicken pieces and cook for 3 to 4 minutes till the colour changes.
  4. Mix in carrots and sweet corn. Cook for 2 minutes.
  5. Add cumin powder, red chilli powder, black pepper and salt.
  6. Pour water or stock and bring it to a boil.
  7. Cover and simmer on low heat for 15 to 20 minutes till chicken becomes soft.
  8. Add lemon juice and coriander leaves. Stir and serve hot.

Notes

For extra flavour, add a few slices of capsicum. Shredding the cooked chicken before serving gives a nice texture.
