  • 4 slices whole wheat bread
  • 1 cup fresh mint leaves
  • 1/2 cup fresh coriander leaves
  • 1 green chilli adjust as needed
  • 1 tbsp lemon juice
  • 2 tbsp curd (yogurt) for creaminess
  • 1/4 tsp salt or as per taste
  • 1 small cucumber thinly sliced
  • 1 small tomato thinly sliced

Method
 

  1. Add mint leaves, coriander leaves, green chilli, lemon juice, curd, and salt to a blender. Grind into a smooth chutney.
  2. Spread a generous layer of the mint chutney on all bread slices.
  3. Place cucumber and tomato slices over two slices of bread.
  4. Cover with the remaining bread slices, press gently, and cut into halves.
  5. Serve fresh or pack for a light tiffin meal.

Notes

If you prefer a lighter chutney, reduce the green chilli. You can also add a pinch of chaat masala for extra flavour. Using curd makes the chutney creamy and helps cut the sharpness of mint.
