Method
- Add mint leaves, coriander leaves, green chilli, lemon juice, curd, and salt to a blender. Grind into a smooth chutney.
- Spread a generous layer of the mint chutney on all bread slices.
- Place cucumber and tomato slices over two slices of bread.
- Cover with the remaining bread slices, press gently, and cut into halves.
- Serve fresh or pack for a light tiffin meal.
Notes
If you prefer a lighter chutney, reduce the green chilli. You can also add a pinch of chaat masala for extra flavour. Using curd makes the chutney creamy and helps cut the sharpness of mint.
