  • 1 cup cooked quinoa use cooled quinoa
  • 1 cup finely chopped spinach
  • 1 medium boiled potato mashed
  • 2 tbsp besan for binding
  • 1 tsp ginger-garlic paste
  • 1/2 tsp red chilli powder
  • 1/2 tsp cumin powder
  • 1/4 tsp garam masala
  • to taste salt
  • 1 tbsp oil for shallow frying

Equipment

  • Non-stick pan
  • Mixing bowl
  • Spatula
  • Small blender or chopper

Method
 

  1. In a mixing bowl, add cooked quinoa, mashed potato, and chopped spinach.
  2. Add besan, ginger-garlic paste, chilli powder, cumin powder, garam masala, and salt.
  3. Mix everything well to form a soft dough. If it feels too sticky, add 1 tbsp more besan.
  4. Shape the mixture into small round tikkis.
  5. Heat a non-stick pan, brush with a little oil, and place the tikkis.
  6. Cook on medium flame for 3 to 4 minutes on each side until golden and crisp.
  7. Serve hot with mint chutney or curd.

Notes

You can add grated carrot or paneer for more nutrition. Keep quinoa completely cooled so the mixture binds well.
