  • 1 cup quinoa washed and drained
  • 1.5 cups water for cooking quinoa
  • 1 cup brinjal thinly sliced
  • 1 onion sliced
  • 2 tbsp vangi bath masala store-bought or homemade
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 6-8 curry leaves
  • 1 tsp turmeric powder
  • 1 tsp salt adjust to taste

Method
 

  1. Rinse the quinoa and cook it with water in a saucepan until fluffy. Set aside to cool.
  2. Heat oil in a kadai. Add mustard seeds, urad dal, chana dal and let them splutter.
  3. Add curry leaves and sliced onions. Sauté until onions turn soft.
  4. Add sliced brinjals and cook until they soften.
  5. Mix in turmeric, salt and vangi bath masala. Cook for a minute until the spices blend well.
  6. Add the cooked quinoa and gently mix everything together.
  7. Cook for 2 to 3 minutes on low heat and turn off the flame.

Notes

Serve with curd or coconut chutney for a balanced and wholesome meal.
