  • 1.5 cups boiled chickpeas soft-cooked for smooth hummus
  • 1 head garlic to be roasted
  • 3 tbsp extra virgin olive oil
  • 2 tbsp tahini or white sesame paste
  • 1 tbsp lemon juice fresh
  • 1/2 tsp roasted cumin powder
  • 1/4 tsp black pepper freshly ground
  • 1/2 tsp salt adjust to taste
  • 3–4 tbsp cold water for blending
  • 1 tsp olive oil for topping

Equipment

  • Mixer grinder
  • Oven or stovetop tawa
  • Small bowl

Method
 

  1. Cut the top of the garlic head, drizzle a little olive oil, wrap in foil, and roast in an oven at 200°C for 20 minutes or roast on a covered tawa until soft.
  2. Once roasted, squeeze out the soft garlic cloves into a bowl.
  3. Add boiled chickpeas, roasted garlic, tahini, lemon juice, roasted cumin powder, black pepper, and salt to a mixer jar.
  4. Blend once, then add cold water gradually and blend again until smooth and creamy.
  5. Taste and adjust salt, lemon, or water for consistency.
  6. Transfer to a bowl and top with olive oil before serving.

Notes

For extra creaminess, remove chickpea skins before blending. Serve with veggies, roti chips, or whole wheat pita.
