  • 1 cup Ragi flour finger millet flour
  • 1/2 cup White sesame seeds lightly roasted
  • 3/4 cup Jaggery powdered
  • 3 tbsp Ghee
  • 1/4 tsp Cardamom powder
  • 2 tbsp Nuts (optional) finely chopped almonds or cashews

Method
 

  1. Heat a heavy pan and dry roast the sesame seeds on low flame for 2 to 3 minutes until aromatic. Keep aside.
  2. In the same pan, add ghee and roast the ragi flour on low heat for about 6 to 7 minutes until it turns slightly darker and smells nutty.
  3. Add roasted sesame seeds to the ragi flour and mix well.
  4. Add jaggery and cook on low flame. The jaggery will melt and bind everything together.
  5. Add cardamom powder and chopped nuts. Mix well until the mixture comes together like a soft dough.
  6. Transfer the mixture onto a greased plate or tray lined with butter paper. Press it evenly.
  7. Let it cool completely for 20 to 30 minutes. Cut into squares and store in an airtight container.

Notes

This barfi stays fresh for up to a week at room temperature. You can add a tablespoon of desiccated coconut for extra flavor.
