  • 4 cups puffed rice (murmura / kurmura) Use fresh, crisp puffed rice
  • 1 cup sev thin variety works well
  • 1 tbsp oil
  • 1 tsp turmeric powder
  • 1/2 tsp red chilli powder (or to taste)
  • salt to taste salt
  • optional: peanuts or roasted chana dal for extra crunch (about ½ cup)
  • optional: curry leaves a few, for flavour

Method
 

  1. Heat the oil in a non-stick pan on medium flame.
  2. If using peanuts or roasted chana dal, lightly toast them until crunchy, then remove and set aside.
  3. Add puffed rice to the hot oil along with turmeric powder, red chilli powder and salt. Stir well so that all puffed rice is coated in spices.
  4. Cook on low flame for about 8–10 minutes, stirring continuously to avoid burning, until the puffed rice becomes crunchy and crisp.
  5. Turn off the flame. Immediately add the sev and mix gently so sev mixes without getting soggy.
  6. If you toasted peanuts or chana dal, mix them in now. Also mix curry leaves, if using.
  7. Let the mixture cool completely. Once cooled, store in an airtight container. Serve with tea or use in chaats like bhel.

Notes

Use fresh crisp puffed rice for best crunch. Cool completely before storing so sev stays crisp. You can adjust spice (chilli, salt) as per your taste. For added nutrition, toss in some peanuts or roasted chana dal.
