  • 1 cup whole wheat flour
  • 1 cup finely chopped spinach fresh
  • ½ cup grated mozzarella or processed cheese
  • 1 green chilli, finely chopped optional
  • ½ tsp ajwain for digestion
  • ½ tsp red chilli flakes or red chilli powder
  • ½ tsp salt adjust to taste
  • 1–2 tbsp ghee or oil for cooking

Method
 

  1. Add whole wheat flour, salt, and ajwain to a bowl. Slowly add water and knead into a soft dough. Rest it for 5 minutes.
  2. In another bowl, mix chopped spinach, cheese, chilli, and red chilli flakes. Keep the stuffing ready.
  3. Divide the dough into two balls. Roll one into a small disc, add stuffing in the center, and seal it gently.
  4. Roll the stuffed dough again into a medium paratha using light pressure.
  5. Heat a tawa and cook the paratha on both sides with a little ghee until golden and crisp.
  6. Serve warm with curd or chutney.

Notes

You can blanch the spinach lightly if you prefer a milder flavor. Use a mix of paneer and cheese for added protein.
