Method
- Wash the spinach well and chop it finely.
- Add spinach, besan, rice flour, ginger garlic paste, cumin, turmeric, chili powder and salt to a bowl.
- Mix gently and add 2–3 tbsp water just to bind the mixture. Do not make a thin batter.
- Heat oil on medium flame. Drop small portions of the mix and fry until crisp and golden.
- For air fryer: brush lightly with oil and air fry at 180°C for 10–12 minutes, flipping once.
- Serve hot with green chutney or curd dip.
Notes
For a healthier version, use minimal oil or cook fully in the air fryer. Add chopped onions for extra flavour if preferred.
