  • 1 cup sprouted moong lightly steamed for 2 minutes if needed
  • 1 cup curd (dahi) whisked until smooth
  • 2 tbsp finely chopped cucumber
  • 1 tbsp chopped coriander
  • 1/4 tsp roasted cumin powder
  • Salt to taste
  • 1 tsp finely chopped green chilli optional

Method
 

  1. Add whisked curd to a mixing bowl and stir until smooth.
  2. Mix in sprouted moong, cucumber, coriander, green chilli, salt, and roasted cumin powder.
  3. Combine gently and add a splash of water if you prefer a thinner raita.
  4. Chill for 10 minutes and serve with roti, rice, or millet dishes.

Notes

For better digestion, lightly steam the sprouts for 1–2 minutes. You can also add grated carrot or chopped tomatoes.
