  • 3 tbsp Suji (Semolina) Use fine suji for smooth kheer
  • 2 cups Milk Use low-fat milk for a healthier version
  • 2 tsp Ghee Helps roast the suji and improves flavour
  • 2 tbsp Jaggery Adjust as per sweetness preference
  • 1 tsp Cardamom powder
  • 1 tbsp Chopped almonds Optional

Method
 

  1. Heat ghee in a saucepan and add suji. Roast it on low flame for 2 to 3 minutes until it turns slightly golden and aromatic.
  2. Pour in the milk slowly while stirring to avoid lumps.
  3. Cook the mixture on medium flame for 5 to 6 minutes until it thickens.
  4. Add jaggery and mix well. Let it dissolve completely.
  5. Sprinkle cardamom powder and stir.
  6. Turn off the heat and garnish with chopped almonds. Serve warm or chilled.

Notes

For a thicker kheer, cook for an additional 2 to 3 minutes. Replace jaggery with dates for a healthier, naturally sweet version.
