  • 1 cup mashed sweet potato boiled and mashed
  • 1/2 cup whole wheat flour
  • 1/4 cup cocoa powder unsweetened
  • 1/3 cup jaggery powder adjust to taste
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 pinch salt
  • 2 tbsp dark chocolate chips optional for topping

Method
 

  1. Preheat the oven to 180°C and line an 8x8 inch tin with parchment paper.
  2. In a bowl, mix mashed sweet potato, jaggery powder, coconut oil and vanilla extract until smooth.
  3. Add whole wheat flour, cocoa powder, baking powder and a pinch of salt. Mix gently to form a thick batter.
  4. Spread the batter evenly into the baking tin. Add chocolate chips on top if using.
  5. Bake for 25 to 30 minutes or until the top is set. Let it cool completely before cutting.

Notes

For extra fudgy brownies, slightly underbake them. Store in an airtight box for up to 3 days.
