Ingredients

Ingredients
  • 250 grams button mushrooms cleaned and dried
  • 1/2 teaspoon ginger-garlic paste or crushed fresh ginger & garlic
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder adjust for mild spice
  • 1/2 teaspoon garam masala powder
  • 2 tablespoons gram flour (besan)
  • 1 tablespoon oil for marination and grilling
  • salt to taste
  • lemon juice for garnish (optional)
  • fresh coriander leaves chopped, for garnish (optional)

Equipment

  • Baking tray or grill pan

Method

  1. Wash mushrooms thoroughly under running water. Drain and pat them dry with a kitchen towel. Trim the stalk ends slightly if needed.
  2. In a mixing bowl, combine ginger-garlic paste, turmeric powder, red chilli powder, garam masala, gram flour, salt, and oil. Mix well to form a smooth spice paste.
  3. Add the dried mushrooms to the spice paste. Toss gently so each mushroom is well coated. Let them marinate for 15–20 minutes.
  4. Preheat your oven (or grill pan) to 200°C (about 400°F) for 5 minutes.
  5. Arrange marinated mushrooms on a lightly oiled baking tray or grill pan. If using an oven, bake for about 20–25 minutes until mushrooms are tender and edges start to brown. If using a pan, grill on medium heat, turning occasionally, until cooked through and lightly charred.
  6. Once cooked, transfer mushrooms to a serving plate. Sprinkle with fresh lemon juice and chopped coriander leaves for extra flavour.

Notes

You can adjust red chilli powder for milder taste. This dish goes well with roti, naan or a side salad. For deeper flavour, you may sprinkle a pinch of chaat masala before serving.
