Tasty Brinjal Curry

  • 300 g Brinjal (cut into cubes)
  • 2 tbsp Oil preferably mustard or groundnut oil
  • 1 Onion (finely chopped)
  • 1 Tomato (chopped)
  • 1 tsp Ginger garlic paste
  • 1/2 tsp Turmeric powder
  • 1 tsp Red chilli powder adjust as needed
  • 1 tsp Coriander powder
  • 1/2 tsp Cumin seeds
  • 1 cup Water adjust for desired consistency
  • 2 tbsp Fresh coriander leaves (chopped)

Method
 

  1. Heat oil in a kadai and add cumin seeds. Let them splutter.
  2. Add chopped onions and sauté until light golden.
  3. Mix in ginger garlic paste and cook for one minute.
  4. Add tomatoes and cook until they soften.
  5. Add turmeric, red chilli and coriander powder. Mix well.
  6. Add brinjal cubes and sauté for two minutes so they absorb the masala.
  7. Pour in water, add salt and cover the pan. Cook for 12 to 15 minutes on medium flame until brinjal turns soft.
  8. Garnish with fresh coriander and serve hot with roti or rice.

Notes

Use tender brinjals for best taste. Reduce oil further for a lighter curry.
