Method
- Heat 1 tsp olive oil in a pan and sauté chopped tomatoes and garlic for 2–3 minutes until soft.
- Dry roast sesame seeds on low flame for 1 minute to enhance flavour.
- Add boiled chickpeas, roasted sesame seeds, sautéed tomatoes, cumin powder, chilli powder, salt, and lemon juice to a mixer jar.
- Blend once, then drizzle in olive oil and a few spoons of water. Blend again until smooth and creamy.
- Taste and adjust salt, lemon, or chilli. Serve chilled or at room temperature.
Notes
For extra flavour, add a pinch of smoked paprika or roast the tomatoes before blending. Refrigerate for up to 3 days.
