  • 2 whole wheat rotis freshly made or leftover
  • 1 cup sliced onion, capsicum, carrot, and cabbage mixed vegetables
  • 1 tbsp oil
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1 tbsp green chutney for spreading
  • 1 tbsp curd or hung curd optional for creaminess
  • to taste salt

Equipment

  • Mixing bowl
  • pan

Method
 

  1. Heat oil in a pan and add cumin seeds. Let them crackle.
  2. Add sliced vegetables and sauté on medium flame for 4 to 5 minutes.
  3. Add turmeric, chilli powder, coriander powder, garam masala, and salt. Mix well and cook for another 2 minutes.
  4. Warm the rotis on a tawa. Spread green chutney and curd lightly on each roti.
  5. Place the cooked vegetable filling in the centre and roll the roti tightly.
  6. Toast the roll on the tawa for 1 minute to make it firm. Serve hot.

Notes

You can add paneer or tofu for extra protein. Use multi-grain roti for more fibre.
