  • 2 cups kharbooja (muskmelon) cubes ripe, peeled and deseeded
  • 1 tbsp fresh lemon juice
  • 1/4 tsp black salt (kala namak) or salt to taste
  • 1/4 tsp roasted cumin powder (jeera powder)
  • 1/4 tsp red chilli powder (optional, for mild spice)
  • 1/2 tbsp fresh coriander leaves (finely chopped) for garnish

Method
 

  1. Wash, peel and deseed the kharbooja. Cut the flesh into 2 cups of bite-sized cubes and place in a mixing bowl.
  2. Pour fresh lemon juice over the kharbooja cubes.
  3. Sprinkle black salt (or regular salt), roasted cumin powder and red chilli powder if using. Toss gently so all pieces are coated evenly.
  4. Garnish with finely chopped fresh coriander leaves. Mix lightly and serve chilled or immediately.

Notes

Use fully ripe, sweet kharbooja for best flavor. You can adjust spices as per taste. For a sweeter version, add a teaspoon of honey or a pinch of sugar, but fresh fruit alone is nutritious and hydrating.
