Creamy Garlic Mashed Potatoes (Indian Style Healthy)

  • 500 grams potatoes (aloo) peeled and cubed
  • 4 cloves garlic peeled and crushed
  • 1/2 cup low-fat milk
  • 1 tbsp light butter or unsalted butter optional, for creaminess
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper powder freshly crushed, optional
  • 1 tbsp fresh coriander leaves (dhania) chopped, for garnish

Method
 

  1. Wash, peel and cube the potatoes. Crush the garlic cloves and keep ready.
  2. In a large pot, add potato cubes, crushed garlic, a pinch of salt and enough water to cover. Bring to a boil.
  3. Once boiling, reduce heat, cover and cook until potatoes are soft (about 15-18 minutes).
  4. When potatoes are tender, drain the water using a strainer or colander. Return potatoes and garlic to the pot on low heat for 1 minute to evaporate extra moisture.
  5. Add low-fat milk and light butter (if using). Using a potato masher, mash everything until smooth and creamy. If mash is too thick, add a splash more milk to reach desired consistency.
  6. Season with salt and freshly crushed black pepper. Mix well.
  7. Transfer to a serving bowl and garnish with chopped fresh coriander leaves.

Notes

For a lighter version, skip butter and use only milk. You can also add a pinch of chaat masala for an Indian flavor twist.
