Sev Puri

  • 12 pieces baked whole-wheat puris (papdi)
  • 1 medium potato, boiled and cubed (or mashed lightly)
  • 1/4 cup red onion, finely chopped
  • ¼ cup nylon sev (or baked sev for healthier version)
  • 2 tbsp green (coriander-mint) chutney
  • 2 tbsp sweet-tangy tamarind chutney
  • 1/4 tsp chaat masala
  • 2 tbsp fresh coriander leaves, chopped for garnish

Method
 

  1. Place the baked puris on a serving plate.
  2. Divide boiled potato among the puris — slightly press them so they stick to puris.
  3. Add a small spoon of green chutney and a spoon of tamarind chutney on each puri.
  4. Sprinkle finely chopped onions over the chutney layer.
  5. Dust lightly with chaat masala for flavour.
  6. Top generously with nylon (or baked) sev for crunchy texture.
  7. Garnish with chopped coriander leaves. Serve immediately to retain crunchiness.

Notes

For a lighter version, use baked puris and baked sev. You can also add finely chopped tomato or raw mango slices for extra freshness.
