  • 1 cup spinach (finely chopped) fresh
  • 1 cup curd whisked, chilled
  • 1 tsp oil
  • 1/4 tsp cumin seeds
  • 1/4 tsp roasted cumin powder
  • 1/4 tsp black salt adjust to taste
  • 1/4 tsp salt adjust to taste
  • 1 green chilli, finely chopped optional

Method
 

  1. Heat oil in a pan. Add cumin seeds and let them splutter.
  2. Add the chopped spinach and sauté for 2 to 3 minutes until it softens. Let it cool completely.
  3. In a bowl, whisk the curd until smooth.
  4. Add the cooled spinach, roasted cumin powder, black salt, regular salt, and green chilli. Mix well.
  5. Chill for 10 minutes before serving for best taste.

Notes

Use thick curd for a creamy texture. You can also blanch the spinach instead of sautéing if you prefer a lighter taste.
