  • 2 large potatoes boiled or baked until soft
  • 1/2 cup grated mozzarella cheese
  • 2 tbsp chopped onions
  • 1 tbsp chopped coriander
  • 1/4 tsp black pepper
  • 1/4 tsp red chilli flakes
  • 1/4 tsp salt adjust to taste
  • 1 tsp olive oil for brushing

Method
 

  1. Preheat the oven to 200°C. Wash and dry the potatoes well.
  2. Cut each potato in half lengthwise. Scoop out the centre gently, leaving a small border.
  3. Mash the scooped-out potato in a bowl. Add cheese, onions, coriander, pepper, chilli flakes and salt. Mix well.
  4. Fill each potato shell with the cheese mixture. Press lightly to shape.
  5. Brush the edges with a little olive oil and place on a baking tray.
  6. Bake for 20–25 minutes until the cheese melts and the top turns golden.
  7. Serve hot with mint chutney or enjoy as is.

Notes

For a healthier twist, use part-skim mozzarella and add finely chopped vegetables like capsicum or sweet corn.
