- Toast the whole wheat bread in a pan or toaster until crisp.
- Scoop out the avocado into a bowl. Mash it lightly with a fork.
- Mix in salt, pepper, lemon juice, coriander, and chilli flakes.
- Cook the egg as you prefer: fry, scramble, or boil.
- Spread the mashed avocado evenly on the toasted bread.
- Place the cooked egg on top and sprinkle a little extra pepper.
Notes
You can add sliced tomatoes, cucumber, or spinach for extra nutrition. Choose multigrain bread for more fiber.
