Tomato Hummus

  • 1 cup boiled chickpeas soft cooked
  • 2 medium tomatoes roughly chopped
  • 1 tbsp sesame seeds for homemade tahini
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1 tsp roasted cumin powder
  • 1/2 tsp red chilli powder adjust to taste
  • 1 tbsp lemon juice fresh
  • 1/2 tsp salt adjust as needed
  • 2–3 tbsp water for blending

Method
 

  1. Heat 1 tsp olive oil in a pan and sauté chopped tomatoes and garlic for 2–3 minutes until soft.
  2. Dry roast sesame seeds on low flame for 1 minute to enhance flavour.
  3. Add boiled chickpeas, roasted sesame seeds, sautéed tomatoes, cumin powder, chilli powder, salt, and lemon juice to a mixer jar.
  4. Blend once, then drizzle in olive oil and a few spoons of water. Blend again until smooth and creamy.
  5. Taste and adjust salt, lemon, or chilli. Serve chilled or at room temperature.

Notes

For extra flavour, add a pinch of smoked paprika or roast the tomatoes before blending. Refrigerate for up to 3 days.
