  • 1 cup Whole wheat flour (atta)
  • 1/2 cup Rolled oats lightly powdered
  • 1 medium Apple grated
  • 1/4 cup Walnuts roughly chopped
  • 1/4 cup Jaggery powder
  • 3 tbsp Coconut oil melted
  • 1 tsp Cinnamon powder
  • 1/2 tsp Baking soda
  • 1 tsp Vanilla essence
  • 2–3 tbsp Milk as needed

Method
 

  1. Preheat the oven to 170°C and line a baking tray with parchment paper.
  2. In a bowl, mix whole wheat flour, oats, cinnamon, baking soda, and jaggery powder.
  3. Add grated apple, coconut oil, vanilla, and walnuts. Combine gently.
  4. Splash a little milk if the dough feels dry. It should be soft and easy to shape.
  5. Scoop small portions, shape into cookies, and place on the tray.
  6. Bake for 12 to 15 minutes or until edges turn golden.
  7. Cool completely on a rack. The cookies firm up as they cool.

Notes

Store the cookies in an airtight box for up to 5 days. You can replace walnuts with almonds or raisins. Great for kids and adults as a healthy snack.
