  • 2 cups brinjal (baingan), sliced thin slices cook faster
  • 150 g tofu, cubed firm tofu works best
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 onion, sliced
  • 2 green chillies, slit
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp salt or as needed
  • 2 tbsp coriander leaves, chopped for garnish

  • Kadai or frying pan

Method
 

  1. Heat oil in a kadai and add mustard seeds. Let them splutter.
  2. Add sliced onions and green chillies. Sauté for 1–2 minutes until the onions soften.
  3. Add brinjal slices and mix well. Cook for 5–6 minutes on medium heat.
  4. Add turmeric, red chilli powder, coriander powder and salt. Mix gently.
  5. Add tofu cubes and fold them in slowly so they don’t break.
  6. Cover and cook for 5–7 minutes until brinjal turns soft and tofu absorbs the flavours.
  7. Garnish with chopped coriander and serve warm.

Notes

You can add bell peppers for extra fibre. Use sesame oil for a stronger flavour if you prefer.
