
Aloo Gobi

- Heat oil in a kadai and add cumin seeds. Let them crackle.
- Add chopped onions and sauté on medium heat until light golden.
- Mix in ginger-garlic paste and cook for 1 minute.
- Add tomatoes, turmeric, coriander powder, red chilli powder, and salt. Cook until tomatoes soften.
- Add potato cubes and mix well. Cover and cook for 5–6 minutes.
- Add cauliflower florets and stir gently. Cover again and cook for 10 minutes on low heat.
- Sprinkle garam masala, mix once, and cook for 1 more minute.
- Turn off heat and garnish with fresh coriander.
Notes
For a healthier version, reduce oil and cook on low heat so the vegetables steam in their own moisture.
