- Heat olive oil in a pan. Add capsicum, carrot, and corn. Sauté for 3 to 4 minutes.
- Add chilli powder, cumin powder, and salt. Mix well and cook for another 1 minute.
- Warm the tortillas or chapatis on a pan for a few seconds.
- Place the sautéed veggies in the centre, add cabbage, hung curd, and coriander on top.
- Fold the tacos gently and serve immediately.
Notes
You can add paneer, beans, or more salad veggies for extra protein and fibre.
