Method
- Take a large mixing bowl and add besan, curd powder, turmeric, ginger powder, and red chilli powder.
- Add cumin, kasuri methi, salt, and black salt. Mix everything well using a spoon or whisk.
- Break any small lumps so the premix stays smooth.
- Transfer the premix to an airtight jar. Store in a cool, dry place.
- To cook: Mix 2 tbsp premix with 1 cup water. Simmer for 5 to 7 minutes until slightly thick. Temper with ghee, mustard seeds, jeera, and curry leaves.
Notes
Adjust premix thickness by adding more or less water. Add fresh curd while cooking if you want a richer taste.
