
Instant Poha
Instant poha is a light, healthy and quick Indian breakfast made with flattened rice, spices and peanuts. Perfect for busy mornings.

Method
- Rinse poha in a strainer under running water for a few seconds. Keep aside to soften.
- Heat oil in a pan. Add peanuts and roast till crisp. Remove and keep aside.
- In the same oil, add mustard seeds, curry leaves and green chilli. Let them splutter.
- Add onions and sauté till they turn soft.
- Mix in turmeric powder and salt.
- Add softened poha and gently mix on low heat.
- Cover and cook for 2 minutes. Switch off the flame.
- Add lemon juice, roasted peanuts and coriander leaves. Mix and serve warm.
Notes
For extra nutrition, you can add grated carrot or green peas while sautéing the onions.
