
Mexican Chicken Soup Indian-Style
A light, healthy and flavour-rich Mexican chicken soup made with simple Indian ingredients. Easy, quick and perfect for beginners.

Method
- Heat 1 tsp oil in a pot. Add garlic and onions and sauté for a minute.
- Add tomatoes and cook till they soften.
- Add chicken pieces and cook for 3 to 4 minutes till the colour changes.
- Mix in carrots and sweet corn. Cook for 2 minutes.
- Add cumin powder, red chilli powder, black pepper and salt.
- Pour water or stock and bring it to a boil.
- Cover and simmer on low heat for 15 to 20 minutes till chicken becomes soft.
- Add lemon juice and coriander leaves. Stir and serve hot.
Notes
For extra flavour, add a few slices of capsicum. Shredding the cooked chicken before serving gives a nice texture.
