
Quinoa Vangi Bath Recipe
A healthy and flavourful Quinoa Vangi Bath made with brinjal, spices and cooked quinoa. Light, nutritious and perfect for everyday meals.

- Rinse the quinoa and cook it with water in a saucepan until fluffy. Set aside to cool.
- Heat oil in a kadai. Add mustard seeds, urad dal, chana dal and let them splutter.
- Add curry leaves and sliced onions. Sauté until onions turn soft.
- Add sliced brinjals and cook until they soften.
- Mix in turmeric, salt and vangi bath masala. Cook for a minute until the spices blend well.
- Add the cooked quinoa and gently mix everything together.
- Cook for 2 to 3 minutes on low heat and turn off the flame.
Notes
Serve with curd or coconut chutney for a balanced and wholesome meal.
