Method
- Cut the paneer into 1.5-2 cm cubes and keep them ready.
- In a mixing bowl, add olive oil, turmeric powder, cumin powder, red chilli powder (or paprika), garam masala, and salt. Stir to form a light marinade.
- Add paneer cubes to the bowl and gently toss until every cube is coated with the spice-oil mixture.
- Preheat your oven to 200°C (or keep a non-stick pan ready on medium heat).
- If using oven: place the marinated paneer cubes on a baking sheet lined with parchment paper in a single layer and roast for 12-15 minutes, turning once halfway for even roasting.
- If using a pan: drizzle a few drops of oil, then add paneer cubes. Roast on medium heat for about 8-10 minutes, turning gently so all sides become lightly golden.
- Once roasted, remove from heat. Drizzle fresh lemon juice and sprinkle chopped coriander leaves before serving.
- Serve hot with green chutney, salad or whole-wheat roti for a healthy meal or snack.
Notes
For a lighter version, use low-fat paneer or press paneer to remove excess water before marinating. Do not overcook paneer to keep it soft and avoid drying.
