Sattu Paratha

This healthy Sattu Paratha is a traditional Bihar-style stuffed paratha made with roasted gram flour, spices, and whole wheat dough. It is filling, protein-rich, and perfect for a wholesome breakfast or lunch.

  • 1 cup Whole wheat flour
  • 1/2 cup Sattu (roasted gram flour)
  • 2 tbsp Onion, finely chopped
  • 1 tbsp Fresh coriander, chopped
  • 1 tsp Ajwain
  • 1 tsp Cumin powder
  • 1/2 tsp Black salt
  • 1 tsp Lemon juice
  • 1 tbsp Mustard oil for stuffing
  • 2 tsp Ghee for roasting
  • Water as needed for kneading dough and stuffing

Method
 

  1. In a bowl, add whole wheat flour and a pinch of salt. Slowly add water and knead a soft dough. Rest it for 10 minutes.
  2. In another bowl, mix sattu, onion, coriander, ajwain, cumin powder, black salt, lemon juice, and mustard oil. Sprinkle a little water to bind the stuffing lightly.
  3. Divide the dough into two equal balls. Roll one portion into a small circle.
  4. Place 2–3 tbsp sattu stuffing in the center and gently seal the edges.
  5. Lightly roll the stuffed dough into a medium-sized paratha.
  6. Heat a tawa and cook the paratha on both sides. Apply ghee and roast until golden.
  7. Serve hot with curd, pickle, or green chutney.

Notes

Adjust spices as per your taste. A little pickle masala can be added to the stuffing for extra flavor.
