  • 1 cup whole wheat flour
  • 1 cup finely chopped spinach (palak)
  • ½ cup grated paneer
  • 1 tsp ginger grated
  • 1 tsp green chilli finely chopped
  • ¼ tsp turmeric powder
  • ½ tsp red chilli powder
  • ½ tsp cumin powder
  • 2 tbsp curd (for soft dough)
  • 1 tsp oil for dough
  • Salt as per taste
  • Ghee or oil for cooking parathas

Method
 

  1. Add whole wheat flour, curd, salt, and a little water in a bowl. Knead into a soft dough and rest it for 10 minutes.
  2. In another bowl, mix spinach, grated paneer, ginger, green chilli, turmeric, red chilli, cumin powder, and salt. Combine well to make the stuffing.
  3. Divide the dough into equal balls. Roll one dough ball into a small circle.
  4. Place 1-2 tbsp of stuffing in the center. Seal the edges tightly.
  5. Gently roll the stuffed dough into a paratha without pressing too hard.
  6. Heat a tawa and cook the paratha on both sides until golden brown, using a little ghee or oil.
  7. Serve hot with curd, pickle, or chutney.

Notes

You can blanch the spinach lightly if you prefer a softer stuffing. Use fresh paneer for the best texture.
