  • 1 cup boiled quinoa
  • 1 cup boiled and mashed sweet potato
  • 1/2 cup finely chopped spinach
  • 2 tbsp besan for binding
  • 1 tsp grated ginger
  • 1 tsp cumin powder
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • to taste salt
  • 1 tbsp oil for shallow frying

Equipment

  • Non-stick pan
  • Mixing bowl
  • Spatula
  • Small grinder (optional)

Method
 

  1. Take a mixing bowl and add quinoa, mashed sweet potato, and chopped spinach.
  2. Add besan, ginger, cumin powder, turmeric, red chilli powder, and salt.
  3. Mix everything well to form a smooth dough. If it’s too soft, add 1 more tbsp besan.
  4. Shape small round tikkis with your hands.
  5. Heat a non-stick pan with a little oil. Place the tikkis and cook on medium flame.
  6. Cook until both sides turn golden and crisp.

Notes

You can add coriander leaves, grated carrot, or crushed peanuts for extra nutrition. Serve with mint curd dip for a healthier option.
