
Tasty Brinjal Curry
A simple and healthy Indian brinjal curry made with basic spices and minimal oil. Perfect for everyday meals.

Method
- Heat oil in a kadai and add cumin seeds. Let them splutter.
- Add chopped onions and sauté until light golden.
- Mix in ginger garlic paste and cook for one minute.
- Add tomatoes and cook until they soften.
- Add turmeric, red chilli and coriander powder. Mix well.
- Add brinjal cubes and sauté for two minutes so they absorb the masala.
- Pour in water, add salt and cover the pan. Cook for 12 to 15 minutes on medium flame until brinjal turns soft.
- Garnish with fresh coriander and serve hot with roti or rice.
Notes
Use tender brinjals for best taste. Reduce oil further for a lighter curry.
