Method
- Preheat your oven to 180°C and line a baking tray with parchment paper.
- In a mixing bowl, add rolled oats, whey protein, baking powder, and a pinch of salt. Mix well.
- Mash the banana in another bowl. Add curd, honey, and vanilla essence. Mix until smooth.
- Combine the wet mixture with the dry ingredients. Fold everything together to form a thick cookie dough.
- Gently fold in the blueberries without crushing them.
- Scoop small portions of dough onto the baking tray and lightly flatten them.
- Bake for 12–15 minutes until the cookies turn light golden.
- Let them cool completely before storing.
Notes
You can replace whey protein with plant protein powder. Store cookies in an airtight container for up to 3 days.
