  • 1/2 cup Rolled oats Ground lightly for better texture
  • 1/4 cup Vanilla protein powder Any plant-based or whey
  • 2 tbsp Peanut butter Smooth
  • 1.5 tsp Pumpkin spice mix Or mix cinnamon + nutmeg + cloves
  • 1 tbsp Honey Adjust to taste

Method
 

  1. Add pumpkin puree, oats, protein powder, peanut butter, pumpkin spice, and honey in a mixing bowl.
  2. Mix everything well using a spatula until a soft dough forms.
  3. If the mixture feels sticky, add a little more oats. If dry, add a spoon of pumpkin puree.
  4. Roll the mix into small bite-sized balls using your hands.
  5. Refrigerate for 20 minutes to set and enjoy.

Notes

Store these bites in an airtight container in the fridge for up to 5 days. They make a great post-workout snack.
