  • 1 cup rolled oats
  • 1/2 cup vanilla whey protein use any good-quality whey
  • 1 cup fresh or frozen blueberries
  • 2 tbsp honey or maple syrup
  • 1/4 cup curd (dahi) thick
  • 1 banana medium, mashed
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • 1 pinch salt

Method
 

  1. Preheat your oven to 180°C and line a baking tray with parchment paper.
  2. In a mixing bowl, add rolled oats, whey protein, baking powder, and a pinch of salt. Mix well.
  3. Mash the banana in another bowl. Add curd, honey, and vanilla essence. Mix until smooth.
  4. Combine the wet mixture with the dry ingredients. Fold everything together to form a thick cookie dough.
  5. Gently fold in the blueberries without crushing them.
  6. Scoop small portions of dough onto the baking tray and lightly flatten them.
  7. Bake for 12–15 minutes until the cookies turn light golden.
  8. Let them cool completely before storing.

Notes

You can replace whey protein with plant protein powder. Store cookies in an airtight container for up to 3 days.
